Central Saint Martins x West African Makers Camp invite you into the Listening Lounge for an evening where flavour, culture and future-thinking food collide.
In conversation and in practice, we welcome Ed Tejada of Silo, bringing the playful, powerful world of fermentation to the table. Through his work with Flux and Silo’s fermentation factory, Ed transforms humble ingredients into joyful, living foods — brined, cultured and alive with intention. A zero-waste chef, his practice is rooted in close relationships with farmers, foragers and collaborators, translating ecological care into deeply thoughtful cooking.
This session explores sustainable food practices through a West African–inflected lens: preservation as tradition, fermentation as resistance, flavour as memory. Expect stories from the kitchen floor, insights into zero-waste systems, and a guided tasting that proves sustainability can be delicious, generous and full of life.
